My co-workers and I schedule a brunch every quarter just to enjoy each others company. This past quarter, we ventured to Atkins Park in the Virginia Highlands. Prior to the brunch date I had already honed in on the Sweet Potato Hash (which is no longer on the brunch menu). If you have been following my food blog, you will know that I have been on the search for the perfect hash. Why I really wanted to devour this dish is because crispy pork belly was included in this meal. I’ve seen crispy pork belly on TV but never have had the chance to enjoy it in a meal. This was my big opportunity. I was not disappointed. The sweetness of the potato, combined with the salty,crunchy pork belly and the tanginess of the Queso Fresco made this meal fabulous. The hash also included roasted red peppers & caramelized onions topped with two poached eggs. I have one complaint … there was not enough of it on my plate.
